
Stop Drying Out Your Bread: A Better Way to Heat
Ever notice how commercial ovens can sometimes leave your bread feeling like a sponge that’s been left in the sun? It usually happens because standard convection air is just too aggressive. It strips the moisture right off the surface before the middle of the loaf even has a chance to get hot. We found a way around that. Instead of relying on hot air, we use short-wave halogen infrared bulbs. Think of it like sunlight. The energy goes straight into the food, skipping the air entirely. The trick is in the heat density. Inside these bulbs, tungsten circulates through a quartz tube, which keeps the filament from burning out too fast. By tweaking the wattage and voltage, we can dial in exactly how much heat hits the dough. If you hit it with a high wattage per millimeter, you get a quick “sear” on the crust. This creates a kind of thermal shield that locks the moisture inside where it belongs. But be careful—if the wattage is too low, the bake takes forever and you’re right back to square one with a dry product. Keeping things simple (and clean) We use high-purity quartz glass so the IR energy actually gets through. And since we use R7s snap-in connectors, swapping a bulb is a breeze. You just pop the old one out and drop a new one in. No need to rip apart the wiring or spend an hour on a repair. One big warning, though:don’t touch the glass with your bare hands. It sounds weird, but the oils from your skin create tiny hotspots. Those hotspots are what usually kill the tube prematurely. Keep it clean, and they’ll last. The trade-off Here’s the catch. Short-wave IR is incredibly fast. Much faster than those old resistive coils. Because the energy is so concentrated, your timing has to be spot on. A few extra seconds and you’ve gone from a perfect crust to a charred mess. That’s why a reliable PID controller is a must. It handles the power cycling for you so you don’t have to play a guessing game with your timers.
