
Getting Your Deck Oven to React Faster
If you’ve spent any time with a deck oven, you know the struggle. You need that perfect, caramelized crust, but if the heat lingers too long, you end up with a crumb that’s dry as a bone. The trick is getting the temperature to spike and drop exactly when you need it to. That’s why we built our infrared (IR) heating elements to handle “high-frequency switching.” In plain English? They turn on and off incredibly fast—we’re talking seconds—without breaking a sweat. Why it actually works It mostly comes down to weight. Traditional heating elements are bulky; they’re wrapped in heavy metal sheaths that soak up heat and hold onto it. That’s a problem when you want the heat to stop now. We went a different route. By using high-purity quartz glass and thin tungsten filaments, there’s hardly any mass to heat up. Instead of warming the air around the bread, these lamps shoot shortwave radiation directly into the dough. The result? When you hit that relay, the heat is there instantly. You can tighten up your PID loop, stop the temperature from overshooting, and finally stop worrying about burnt bottoms. The “Burn-Out” Problem Here’s the catch: flicking a heater on and off constantly is brutal on the hardware. The tungsten expands when it’s hot and shrinks when it’s cold. Do that a thousand times a day, and most lamps just snap. To fix this, we tweaked the halogen gas pressure inside the tube. It creates a little cycle that basically “repaints” the tungsten back onto the filament as it evaporates. It keeps the lamp healthy even when you’re pushing it hard. One thing to keep in mind Since these lamps pack a huge amount of power into a tiny space, they can be a bit demanding on your electronics. Check your wiring. Make sure your contactors can handle the initial surge of power (the inrush current). If your electrical panel is too small, you’ll be tripping breakers or frying relays long before the lamps ever give out. But once the wiring is set? It’s easy. These are drop-in replacements for your standard arrays. Just wire them up, dial in your cycle time, and you’ll feel the difference in the heat immediately.
